Per Se was one of four restaurants in New York to receive three stars in the first Michelin Red Guide of restaurants and hotels in New York City (Alain Ducasse at the Essex House, Jean Georges and Le Bernardin)
Only six days after it opened, Per Se closed on February 21, 2004 due to a fire and re-opened May 1, 2004.
Thomas Keller was quoted as saying the name "per se" came from answering questions about what his New York restaurant would be like, to which he would reply 'Not the French Laundry, per se.'
