In 1999 Bouley Bakery was made-over as an upscale restaurant.
Original location closed after September 11, 2001 and reopened as Bouley.
Upstairs at Bouley opened in 2005 and expanded into Bouley Bakery's old space in 2008.
Bouley Bakery became Bouley Bakery & Market in 2008, when it moved to 120 West Broadway.
Upstairs at Bouley now Bouley Studio.
