- The original site at the Viala Plantation house opened July 1978 and was destroyed by fire in October 1998. It reopened in 1999 in a former house of Chef Folse, called Bittersweet Plantation.
- Public restaurant closed in 2005, the venue is now a " private facility for customers of Chef John Folse and Company".
