  • Chevet, the catering company for which Escoffier was Head Chef, served the very the first dinner in the Eiffel Tower in 1898, a dinner hosted by Mr. Eiffel himself.
  • Escoffier is credited with institutionalizing service à la russe, whereby dishes were presented to diners one at a time, in a set order.
