Chef Thom Santiago is an American Ex-Pat currently Executive Chef/Assistant Director for the Dumaguete Academy of Culinary Arts, DACA in the Philippines. Chef Thom was a musician turned businessman then Chef. He has traveled throughout the USA, Caribbean, Europe and Asia Pacific regions. He was partner/owner Chef of Blue Zydeco Bayou, BZB Bar & Grill. The theory behind the grill was using fresh ingredient's and creating original Cajun, French Creole & Soul Food dishes while offering Chef daily specials, French classic's as well as Tex Mex. BZB was known for a great ambiance, great prices & great music. The BZB was a must visit locale for tourist, local's, politicians, artist and the like. Since then Chef Thom has taught Basic Culinary at Asia College of Technology-ACT, Cebu, Philippines for one (1) year as well as lectured at the University of Cebu and the University of Visayas in the Philippines.
