Executive Chef

Born in Greece and raised in Paris, France, Executive Chef Jean Christophe Villard’s inspiration for his love of cooking came from his mother, who owned a Parisian hotel and restaurant.

In 1986, Villard began his career in hospitality as a cook after his graduation with a CAP cuisine, CAP restaurant and BEP cuisine and Brevet de Technicien Hotelier (BTH) from Ecole Jean Drouant, Rue Mederic, Paris. Keeping with family tradition, Villard opened his own restaurant, an intimate French bistro called L’Ambrosia in Paris’ 17th district.

In 1997, Villard followed his passion and moved to the culinary melting pot of New York City. Villard began as the Head Chef at Les Deux Gamins, then onto Restaurant Associates, Café Centro. In 1998, Villard became the Executive Chef at Bobby Van’s Steakhouse and it was here, that he changed the style of New York City Steakhouses.
