Passionate and creative chef, I use as much locally grown, reared, caught and sourced produce whenever possible, finding as much information from field to fork as possible. Energy conservation and food miles are key. I concentrate on good technique and natural flavours.
I'm multi-skilled across meat and sauce, fish, pastry and larder. I write unique recipes and I am in the process of writing a book, when I have the time.
