Growing up in northern Nova Scotia, Mark developed a love for cooking at a young age. Making a decision to embark on a successful cooking career he decided to enroll at the Culinary Institute of Canada at age 20. While recognizing that it was vital to obtain a formal education in culinary arts, the two year program and would act as a solid foundation to his cooking career. Excelling at his studies in Charlottetown, Mark also found time to compete in various culinary competitions which included:
• Chaine des Rotisseurs Regional Commis Competition
• Atlantic Provincial Culinary Exhibition Cold Salon - *Gold Medal
• Culinary Institute of Canada Cold Salon - *Gold Medal
• Charlottetown Winter Carnival Ice Carving Competition - *2nd place
While finishing amongst the top of his graduating class Mark sought to continue his learning experience by becoming an apprentice. His apprenticeship included working under the tutelage of Chef Sheldon Russell at the Keystone Alley Café in Stratford, Ontario and as well as Chef Michael Allemeier CCC at Teatro Restaurant in Calgary, Alberta.
Marks own cooking style is heavily influenced by French and Italian cuisines.
