Joseph started his culinary career as a dishwasher at age 14. He was called up to the line to help out one busy Friday night and fit right in. Joseph had a passion for food at a young age and knew what profession he was going to be a part of. While attending Niagara College, he worked in Yellowknife where he cooked for the royal family on their 1994 commonwealth tour. After attending Niagara College, he worked in various restaurants and hotels in the Golden Horseshoe area where he did his apprenticeship under some of the finest chefs in Ontario. He placed 3rd and 1st in the annual Hamilton Apprenticeship board black box competition in 1995 and 1996 respectfully.

After obtaining his Associate Bachelor degree in hotel and restaurant administration, he went on to obtain his Red Seal Certification in both cook and baker. Joseph then took the role as Sous Chef at Asti’s Ristorante on Old lakeshore in Burlington where he was part of two 1st place awards for best fine dining Italian in 1997 and 1998.After leaving Asti’s, he spent the next 5 years working at McMaster University, raising the bar for the student dining experience. While at McMaster, he was part of the 2003 CCFUSA gold medal team, winning first place for best appetizer, entrée and display

In late 2003, he moved to BC to further his culinary passion and journey. After making stops at the Diamond Centre @ SFU, Adesso Bistro and dabbling in the world of film catering, he took the executive chef position at the O’Keefe. Known as the finest senior facility in North America, he dazzled residents and families minds alike with his cutting edge cuisine earning him best food and beverage department 2007 through 2009. Joseph also brought the Oceanwise program to the O’Keefe, making it the first senior facility to join the program.

Joseph enjoys using local sustainable ingredients and taking full advantage of the bountiful ocean here in Vancouver. He also loves taking the time to pair as many Okanagan wines with the dishes he creates.
