He believes that cooking does not need to be overly complex to be exciting; what makes great experiences and food is simplicity and freshness.
Ren is quoted saying: “Serve it raw, serve it cooked, cured or still wiggling, cook from the heart. Use the simplest but the freshest ingredients always and allow the food to speak its nature and comfort. Food should make you feel alive, awake and energized in order to be truly healthy.”
Ren is currently the chef of The Spoke Club in Toronto, a private membership club catering to people in the media, arts and entertainment fields. A creative atmosphere invites a well traveled audience and Ren keeps them coming back, again and again.
